My Husband is So Nice (and So Am I)

January 27 National Chocolate Cake Day. I didn't make chocolate cake that day but I made some recently. Mmmm. Thinking about it, now I want to make chocolate cake again.
 
January 28 was National Blueberry Pancake Day and even though my husband had a cold, he still made blueberry (and plain and chocolate chip) pancakes, omelettes, and hashbrowns.
 
January 29 was National Corn Chip Day and I made chicken soup (you know, for colds) and we put Fritos in our bowls of soup. Actually, it was turkey meat in the chicken broth with veggies and some pasta so it was turkey soup?
 
January 30 was National Croissant Day. We didn't have any croissants so we just had Asian Chicken Salad Sandwiches (from A Season of Family Meal Plans, volume 1) on rolls. Still yumm even without the croissants.

Gingerbread Cookies!

I found a gingerbread cookie recipe I like and want to keep using. It's one I used years and years and years ago but haven't in a while. There were quite a few years when I didn't even try to make gingerbread cookies. Rolling out and cutting out isn't my favorite thing. I've tried different recipes in the last few years but decided to do this one again this year and I've got to say, I was pleased with the results. Jet and I made them earlier on and I willingly made them again for National Gingerbread Cookie Day on November 21.
The recipe is from Family Dinner Cookbook by Debbie G. Harman and it's called "Gingerbread Friends." They taste so good to me.

Speaking of that cookbook, that same day I used the recipe for "Chicken Croissants" in it because Stephanie gave us some croissants when she came over and I love chicken salad on croissants. I scaled the recipe back because it's meant for a crowd and I substituted apples in place of grapes because I had apples but not grapes. #shelfcooking
The croissant sandwiches went well with stuffing for National Stuffing Day that same day.

Croissant Day

January 30 was National Croissant Day.
My sweet husband got up early to do dishes, clear off the table, and make breakfast sandwiches on croissants for everyone.
Since he cleared off the table, I was able to try out more Christmas presents. Donut molds and a donut recipe book I got from Santa. Woohoo. I've been wanting to try baking donuts.

Chicken Salad Croissant Sandwiches

Wow. My life really does revolve around food... and I'm not even a food blogger. I blog about reasons to celebrate and ways to celebrate. And one of the easiest ways to celebrate is with food. Well, easy to plan to celebrate with food. Sometimes the food takes a long time to prepare like when I make Indian food.
Anyway, here's more celebrating with food. 
January 30 is National Croissant Day. I happened to be looking at my calendar before I went into Costco the other day and saw this so I picked up some croissants so I could make chicken salad croissant sandwiches. Mmmmmm.
It was the kids turn to make dinner but I did want these sandwiches so I contributed and the kids did the rest. Good job, kids.

Croissant Pancakes

For National Croissant Day on January 30, Jr. Jr. (with some help from his sister) made us chocolate chip pancakes in the shape of croissants/crescents.
I put peanut butter on mine.

I didn't mention but the day before Lucky came home with his 100 days hat. It says, "I'm 100 days brighter." Just like his siblings before him around this time of year, his class celebrated the 100th day of school. He loves getting those kinds of hats at school and showing them off to us.
And that is his "smile for the camera" smile. Even his school picture has that smile. Awesome kid. Reminds me of both Jr. and Jr. Jr. and their "camera" looks in the past.
