Spudnuts Recipe

Jill asked for our recipe for spudnuts, so here goes:

Spudnuts

2 C mashed potatoes
2 C warm milk
2/3 C sugar
10 C flour
5 Tbsp yeast
1 cube margarine (soft)
1 Tbsp salt
4 eggs beaten

Soften yeast in 3/4 C sweetened water. Mix all remaining ingredients except flour. Add 2-3 C of flour to mixture, add yeast then rest of flour. Dough should be almost sticky but not quite. Let it rise till double. Roll out on floured counter. Cut out donuts. Let raise again. Deep fry being careful not to puncture when turning. Drip on rack, then on paper towel. Then glaze.

Glaze

Mix 1 lb. powdered sugar with a little hot water and vanilla until consistency of honey.

Serves: a lot - most of the time we half (halve) the recipe.
Best served hot (in my opinion, when fresh they are better than Krispy Kreme).

Spudnuts

One night, Jeremy made spudnuts- donuts made with mashed potatoes. It takes up the whole table to make them.

The next morning the kids came out when it was time to frost them.

Here are some of the things that were heard-

Nichole: Oooh, they look like like donuts.
(pause to take a bite)
And on the top they taste like donuts.

When Jr. woke up and came out-

Nichole: Daddy's making spudnuts into donuts and donut rolls. Try it. It's delicious?

Did you know those are yummy, too?

Jr. (in a confused voice after picking off the sprinkles and eating them): No more sprinkles.

Nichole (while watching Daddy frost the donuts and holes): There's some of those sauce on the donut rolls.
It's going to be a sprinkle pie donut roll.
