Muffin Night

February 20 was National Muffin Day. It's become tradition for that evening to become Muffin Night! We haven't done one of those in a while. Last year we made all eggless muffins. This time we decided to use Shelf Cooking 101 Build Your Own Recipe Muffins section.
We had cheese and bacon muffins, apple cinnamon muffins, and mini chocolate chip mini muffins.
We could have had more variety based on the book, but that was all we had time for that night. They came together pretty quickly.

Muffin Night

So... you know egg prices haven't been that good lately. Well... there's been something I've been wanting to do for a while and it worked out on National Muffin Day, February 20. 
What I wanted to do? Muffin Night! But with all eggless muffins. And we did it.
We had pizza muffins.
Blueberry muffins from a mix we had in the pantry.

Muffin Night

I'm too tired to post about what a great day I had yesterday so I will let you know that tonight we had Muffin Night again. It's been a while and I keep canceling it when I have it on the menu plan but we finally did it tonight to celebrate National Muffin Day on February 20. Yay.

The kids helped so we were able to have a good variety again and we got some good use out of my new muffin tins. Yay.

And there are so many leftover muffins. Yay.

Muffin Night

Muffin Night is becoming more frequent. We recently had a Mix-In Muffin night. We made Mix-In Muffins way back in 2012 for April General Conference. That was before our nachos tradition started.

This Muffin Night I didn't feel like making a bunch of different kinds of muffins. I was still tired from running around earlier in the day. 

Jet was helping me do dishes earlier and when he decided to be done, he went into the living room and climbed into his car seat. That was my cue that it was time to go out. So he and I made the drive to Bridal Veil Falls. I love Bridal Veil Falls. Maybe you know that. I pushed him around in the stroller then when it was time to go he was upset that I wouldn't let him run around. Yeah, I didn't want him running into the river. So we drove to a park where he could run around. He had fun. He found a pine cone "ball" and threw that around a little but also enjoyed pushing the stroller and crawling around on the ground. We had fun.

So that evening we had Mix-In Muffins. The idea came from the March 2012 Friend Magazine. I just got out a whole bunch of things you could put in muffins and let everyone put in what they wanted. There were both sweet and savory choices. The most unique combination? Jr. Jr. had a pepperoni and marshmallow muffin.

So that was our Muffin Night.

Muffin Night

Oh boy. Muffin Night has become a thing. It all started the end of October when we made one type of muffin then made more and more and more. Muffin Night was a hit and has been requested since then.
This time for Muffin Night I asked that each of the kids make a type of muffin. I helped some. Here are the types of muffins we had:
Lucky made corn dog muffins. Jr. Jr. made orange cranberry muffins. Jr. made s'mores muffins. Nichole made cinnamon streusel muffins.

Since March 21 was National French Bread Day, I made French bread to go with our muffins. I tried a new recipe and was very pleased with the result (and I've made it two more times since then). The recipe is from Mel's Kitchen Cafe and it's called Easy Homemade French Bread. We make a lot of recipes from her site.

Earlier while I was helping boys with muffins, Nichole helped with Jet and made him smile for World Puppetry Day (also on the 21st). That little boy loves puppets... and his siblings.
